We are always cooking up something good and we thought we would share a recipe with you what will be on our table on New Year's Day as we welcome 2018.
Vermont's Own New Year's Eve Stove Top Pot Roast Recipe:
1 (3 pound) beef round tip roast
flour for dredging
¼ cup olive oil
2 medium onions
3 large carrots
3 large stalks celery
2 cloves garlic
salt and pepper to taste
1 cup dry red wine
allspice to taste
12 oz. beef broth
2 tablespoons cornstarch dissolved in a small amount of water
Heat oil in pot over medium heat. Dredge roast in the flour and brown in oil on all sides. Stir in chopped onions, carrots, celery and garlic. Cook until slightly brown. Add red wine and bring to a simmer before pouring in the beef broth. Add allspice, salt and pepper to taste. Reduce heat to low, cover and cook until the beef is tender, about 2 to 3 hours.
When beef has finished cooking, remove and allow to rest for 10 minutes. Thicken remainder of cooking liquid with the cornstarch to make a gravy. Slice beef and serve. Enjoy!
