Vermont’s Own Honey Hand Pie
You will need:
Four medium apples
1/2 cup chopped walnuts
A pinch cinnamon
1 teaspoon tapioca
Juice of 1/4 of an orange
3/4 cup Champlain Valley Apiaries honey
3 teaspoon butter
2 beaten eggs
2 tablespoons of organic Vermont maple sugar
Suggested Crust
1 crust, enough for 4 hand pies
1 1/2 cups of your favorite flour
1/2 tablespoon sugar
1/4 tablespoon salt
1/2 cup unsalted butter cut into pieces
Mix flour, sugar and salt. Add butter. Add 1/4 cup ice water. Dough should come together in clumps. Wrap in plastic and chill until firm.
Preheat oven to 375 degrees. Cut apples into small pieces and place in a large bowl. Fold in nuts, cinnamon, tapioca, orange juice, and three teaspoons of Champlain Valley Apiaries honey. Melt butter over low heat and add the remaining honey and stir. Remove saucepan from heat and add the two beaten eggs. Stir this mixture and then fold into other ingredients. Place into hand pie crusts and sprinkle with organic Vermont maple sugar. Bake for 45-50 min.
